When it comes to instant comfort, curd rice is one dish that really oozes flavour. It’s cooling, flavourful and extremely easy to make – what’s not to love? This South Indian classic is incredibly versatile, but there’s nothing like the traditional version. Whether you’re in India or elsewhere, it’s a beloved staple in many households. Recently, television personality and cookbook author Padma Lakshmi shared her take on this comforting dish, and it sounds absolutely drool-worthy.

Padma Lakshmi posted a video on her official Instagram showing the recipe for curd rice. She starts with four cups of plain, day-old rice, which she mixes with four cups of curd. She adds a generous amount of salt and then mixes everything by hand, explaining that this technique is called curdling. Pesunja SadamWhich means “mixed by hand.” She explains that it’s not necessary to use basmati rice, as it breaks down in the curds.

After setting the mixture aside, Padma prepares the tadka or tempering for the curd rice. In a pan with some unscented sesame oil, she adds black mustard seeds, asafoetida, urad dal and red chillies. She recommends putting all the ingredients together before starting to ensure that the tadka stays fresh and aromatic. When the mustard seeds start crackling, she adds curry leaves and pours the tempering into the curd rice, mixing everything slowly. As the rice absorbs the moisture of the curd, the curd thickens and the dish is ready to eat!
