Oreo is now creating new recipes and getting them on shelves at an incredibly fast pace – all thanks to the use of artificial intelligence (AI). Oreos are manufactured by snack giant Mondelez International. Previously, new recipes were created largely through trial and error methods. Now, a new tool developed by Mondelez, The Wall Street Journal, is accelerating the creation of snack recipes tailored to certain flavor profiles. Mondelez’s food scientists describe the tool as creating recipes “by specifying desired characteristics, including taste, aroma and appearance.”

Each recipe is still taste-tested by humans, but the company claims the products are “approaching production four to five times faster than in pilot or production trials.” Mondelez’s AI tool uses machine learning instead of generative AI as seen in ChatGPT.

The use of AI reduces laboratory work, speeds up production and reduces the need for frequent taste testing. So far, AI tools have been used in the creation of 70 different products manufactured by Mondelez, which also owns Toblerone, Cadbury and Clif, including the gluten-free Golden Oreo.

The tool also helps upgrade or refresh recipes for existing products, which are “evaluated every few years for potential changes, such as moving to a new chocolate-chip or vanilla-extract supplier or No.”
