Lauki or ghiya contains more than 90% water and essential dietary fibre, making it a light yet satisfying option for weight loss. It is also rich in vitamins A, B, C, K and E, making it a nutritious option. The raw cucumber and carrots add a refreshing crunch to it that perfectly balances the soft texture of cooked ghiya and potatoes. The aromatic flavours and earthy notes of the salad make for a unique and delicious experience!

How long can you store this ghiya (bottle gourd) salad?

This salad can be enjoyed fresh, but you can store it in the refrigerator for up to 24 hours. Keep in mind that fresh vegetables may lose their crispness over time. To keep the salad fresh, store it in an airtight container. Keep the dressing separate and add it just before serving to prevent the vegetables from getting soggy. You can prepare the dressing in advance and store it in a sealed container in the refrigerator.

How to make healthy Ghiya (Bottle Gourd) Salad at home | Ghiya (Bottle Gourd) Salad Recipe

It is very easy to make ghiya (bottle gourd) salad at home. This recipe has been shared by digital creator Mehak Sharma (@shadesofmoon) on Instagram. First, wash a cucumber and a carrot and cut them into small pieces. Similarly chop a gourd. Heat a pan and cook the chopped ghiya for 3-5 minutes. Meanwhile, chop a potato and cook it on the pan along with the ghiya. Mix all the chopped vegetables in a large bowl. Top with roasted peanuts, walnuts and cherry tomatoes. Mix well and keep aside.

For the dressing, whisk together 3-4 tablespoons of extra virgin olive oil, chopped garlic, honey, fennel seeds, lemon juice and garlic powder. This makes a delicious dressing. Mix it with the chopped vegetables and add some cheese shreds. Mix everything well and serve!
