Thacha is a very liked Maharashtrian chutney made using green chillies, garlic, fresh coriander and roasted peanuts. The way it stands out, there is no mixer, no shortcut. It is cooked in a mortar, which gives it a thick texture. Traditionally, it is enjoyed with bread or paratha and packs a bold flavor punch.

Ingredients for Thecha Noodle:
1 packet noodle
1 onion chopped
1/2 capsicum, chopped
2 tablespoons oil
1 tablespoon soy sauce
1 tablespoon vinegar
3 tablespoons of chutney
salt to taste
How to make thecha noodles:
Start by boiling noodles as per the packet instructions. In a pan, fry some chopped onions for a few seconds.
Next, toss in chopped capsicum in length and give it a quick stir. After a little wait, add soy sauce and lemon juice to the mixture.
Allow it to cook for a few minutes before adding 3 tablespoons of Thacha chutney. Mix everything well. Add salt to taste.
Now, mix in boiled noodles and toss until it is completely coated. If you prefer your noodles as spiyer side, adjust the volume of Thecha accordingly. You can also add a light spraying of pepper.
Garlic and peanuts bring in a strong kick of taste. Peanuts also add that correct crunchy bite to the noodle dish.
