Traditionally paired with puri and kachori in Uttar Pradesh, this dish can easily enhance the taste of your regular chapatti or rice at home. Plus, itās a lifesaver for those weekends when youāre not in the mood to cook something elaborate.

Mathura Dip Aloo Recipe | How to make dipped potatoes
Making dipped potatoes is very easy. Instagram creator @mygardenofrecipes shared a step-by-step guide. Hereās how you can make it:
1. Prepare the potatoes
First of all wash and clean the potatoes. Cook them in a pressure cooker with water until soft. Let the steam release naturally and keep the potatoes aside.
2. Prepare green paste
In a blender, combine spinach, coriander, ginger, green chillies and whole spices like cinnamon, green cardamom, black cardamom, black pepper and kasoori methi. Add a little water and make a smooth paste.
3. Make gravy paste
ā Heat mustard oil in a pan. Add spices like fennel, cumin, asafoetida, red chilli powder, coriander powder and salt. Stir well, then add the spinach mixture. Cook until the paste thickens. Once the potatoes have cooled, crush them roughly and add to the pan. Adjust the water as per your preferred consistency and cook on low flame till the gravy thickens. Adjust the spice level, garnish with ginger and green chillies, and serve hot with freshly made puris!
