1. Scrape the rough surface
To remove the bitterness of bitter gourd, take the peel of the vegetable and scrape off its rough surface. Make it smooth.

3. Use salt
Rub the cut bitter gourd with plenty of salt. Transfer the pieces to a bowl and let them sit for 20-30 minutes before cooking.

Achari Bitter Gourd Recipe | How to make pickled bitter gourd at home
Making pickled bitter gourd is very easy. This recipe has been shared by digital content creator Bristy Kumari on Instagram. to make it:
1. Prepare bitter gourd
Wash and clean the bitter gourd thoroughly. Pat dry to remove moisture. Cut diagonally or into smaller pieces as desired. Cancel.
2. Prepare the masala
Heat a pan on medium flame. Dry roast red chilli, fennel, mustard and coriander until fragrant (about 4-5 minutes). Let them cool, then pound in a mortar. Add salted boondi on top and grind it finely to make masala. Cancel.
3. Spice up the bitter gourd
Place the bitter gourd in a plate and add turmeric, red chilli powder, salt and garam masala to it. Mix well to coat evenly. – Add prepared roasted masala and mix again.
4. Cook the bitter gourd
– Heat mustard oil in a steel pan. Add nigella seeds and pickled bitter gourd. Stir, then cover with a lid and cook for 15-20 minutes or until soft. Once done, add mango pickle masala and a drop of lemon juice to balance the taste. Serve with hot dal and roti!
