Fenugreek leaves
Start by washing fenugreek leaves thoroughly and finely cut them. Heat a little oil in a pan, add cumin and asafotida, then toss in fenugreek leaves. To get rid of raw taste, squeeze for a few seconds, then turn off the heat and set it aside.
Make gram dal paste
Take a small bowl of soaked gram dal and mix it in a smooth paste with salt, green chillies, ginger and garlic. Transfer this mixture to a bowl, then add wheat flour and Saeed Methik leaves. Red chili powder, nigela seeds, coriander powder, cumin powder and toss in salt for taste. Mix everything well.
