It is believed that it is a head among the people of Old Delhi, especially in the old times Muslims. Even now you can find many food shops in Old Delhi, which are making Muglai bread on earthen oven and selling it with luscious curry. Khameri roti is still made in many Muslim homes and they combine it with mutton and chicken gravy and even lentils.

What is made of Khameri roti?
Khameri roti is made from a special dough by combining wheat flour, salt, sugar, yogurt, and Khmer. This natural fermentation agent of Khmer allows to soak wheat grains overnight and sprout them. Sprouted wheat is then a fine paste in a fine paste, which not only fermentes flour, but also gives it a subtle touch taste.

To make pillar bread, first mix the yeast with some dough, sugar, salt and water. Mix well and let it rest for 20 minutes. Mix the yeast mixture with flour and knead with milk and oil water. Cover the dough with a muslin cloth and let it rest for about two hours. Make rotis with flour for a long time and top them with watermelon seeds, sesame seeds, kalonji seeds and coriander leaves.
