You can also try adding rice flour to the batter for extra crispiness. Simply dip the shaped cutlets gently into the cornflour batter and then into the rava or breadcrumbs. Moringa flower cutlets (musca flower dangar) are very simple to make. This recipe has been shared by @keertidacooks on Instagram. To make it:
1. Prepare the flowers
Take 1.5 cups of Moringa flowers and wash them thoroughly. Pat them dry and chop them finely or at least small enough to be included in the cutlets.
2. Prepare vegetables and spices
Take an onion and green chilli and chop them finely. Add these to the bowl with the moringa flowers. Now add grated coconut, turmeric powder, garam masala, salt, tamarind extract and gram flour (for binding) and mix all the ingredients.
3. Make cutlets
Mix everything well with your hands and shape the mixture into small balls or cutlets. The cutlets will not be tightly bound like potato cutlets so be careful when handling them. Lightly fry on both sides till golden and serve hot!
