Should you use ghee to cook all your food?

no way. While there are many benefits of ghee, relying on it because your only cooking fat is not ideal. Nutritionist Amita Gadre emphasizes that peanut oil, olive oil, and kusum oils such as oils contain unique fatty acid compositions and nutrients that cannot provide ghee alone. Ghee contains saturated fat (SFA), but other oils provide monounsaturated (MUFA) and polyunsaturated (PUFA) fat required for a balanced diet.
