We Indians have an old tradition of eating food served on banana leaves. It is a practice cherished for its eco-friendliness and cultural significance. But how often do we get a dish made entirely of leaves? Enter Patra, a dish from Gujarat and Maharashtra that has caught the internet’s attention thanks to a viral Instagram video showing its preparation. The clip takes viewers behind the scenes of the making of this traditional dish. Prepared from colocasia leaves (arabi leaves). The preparation process begins by spreading large, green leaves and dipping them in a batter made from gram flour. This paste is cooked with spices like turmeric, red chilli and jaggery, giving it a sweet and spicy taste.

What makes this video so fascinating is the scale of the production. Dozens of leaves are tightly rolled by hand to form a spiral. These are then steamed to lock in the flavor, after which the rolls are cut into pinwheels. While patra can be enjoyed in boiled form, many Gujaratis prefer to pan-fry the slices. The caption of the viral video reads, “Gujarat’s biggest Patra making.”
