According to the food vlogger, “Harvesting Ceylon cinnamon is one of the most complex and methodical processes in the world of spice farming, requiring a mastery that very few people possess.” “The practice begins with the careful selection of cinnamon trees during the rainy and winter seasons, when the high sap content of the bark makes peeling more efficient. Each harvester has a set of specialized equipment, including the following: “Includes a curved knife, the cocetta, engineered specifically to remove the outer bark, and the indispensable brass rod, which serves to separate the prized inner bark from the wooden stem,” his caption. The food vlogger said, “After carefully scraping off the outer bark, the artisans rub the inner bark vigorously with a brass rod. This helps in extracting the sap, which loosens the inner bark from the wooden stem.” The artisans then “peel away the inner bark into continuous strips.” Next, they craft these strips into signature quills, measuring approximately 42 inches across. Small pieces are added to ensure stability, and lace may also be used for additional support. The drying process involves exposing the cuttings to shade and sunlight, which takes 4 to 7 days. After that 14 percent moisture level is achieved. “The final grading of these quills follows stringent standards, with the most prestigious Alba grades requiring a diameter of less than 6 millimeters,” the food vlogger explained.
