To make rice kanji, soak cooked rice overnight in an earthen pot for fermentation. An earthen vessel is necessary here so that the kanji does not spoil or become poisonous during fermentation. Later, filter the fermented rice water and add one spoon two curds, salt, green chilli and green coriander to it. Before eating rice and kanji for breakfast, you can also add tadka to it as per your taste.
