Shalgam ka Bharta is surprisingly easy to make, and the result is a delicious, protein-rich dish that can be enjoyed with crunchy parathas or rotis. First of all, wash and peel 8-9 medium sized turnips thoroughly. Cut them roughly into cubes and pressure cook with a little salt and water for about 3-4 whistles. Once cooked, mash the turnips using a masher to get a smooth, soft texture.
Next, heat some desi ghee or any neutral oil in a pan and fry 2 medium sized finely chopped onions on medium flame until they turn light brown. Avoid overcooking the onion at this stage. When the onion is ready, add 3 finely chopped tomatoes, 2 inch piece of ginger and one green chilli. Cook until tomatoes become soft and pulpy.
– Now add dry spices- 2 teaspoons red chili powder, 1-2 teaspoons coriander powder and salt as per taste. Let the masala cook on low flame until the oil starts separating from the masala. This is the stage where the flavor becomes intense, and the aroma becomes even more appealing.
Once the masala is ready, add the mashed turnips to the pan and mix everything together. One or two teaspoons of sugar is added to balance the taste and increase the sweetness of the turnips. Let the mixture cook for 5-7 minutes to ensure that the flavors combine completely.
finally, garnish with freshly chopped coriander and serve hot with paratha or roti. This Shalgam Ka Bharta will not only satisfy your taste buds but will also be a delightful change from the usual vegetable dishes you make.
