Podi masala is used extensively in South Indian homes. Whether it is in the form of a stuffing for the dosa or topping for the Idlis, this spice should be one in case of South Indian food. Typically, podi masala is made with lentils, seeds and spices. However, have you ever tried or heard about a one made with mushrooms? Yes, you heard that right. Mushrooms are usually enjoyed as a vegetable or as a curry, but you will be surprised to know that their spice is equally delicious. Recently, MasterShef Aruna Vijay took her official Instagram handle to share a recipe for mushroom podi. Once you try it, it can just become your compatible for food.

What is Podi Masala?

Podi, also known as gunpowder, is a dry masala made by roasting lentils, seeds and spices. It has a different orange color and is often enjoyed with a drizzle of ghee. Some versions of Podi Masala also contain peanuts, dried coconut and curry leaves. You are being served podi masala in most South Indian restaurants, but this mushroom pod gives it an interesting turn, allowing it to be an absolute.

How to store mushroom podi?

The best way to store mushroom podi is in an airtight container. In this way, it will not come in contact with air and remain fresh for a long time. Ensure that the airtight container is placed in a cool, dark place away from sunlight.

How to make mushroom podies at home Mushroom Podi Recipe

Using a mandolin slicer, thin and wash the mushrooms and start slicing. Dry the mushrooms for two days, until they become crisp. In a pan, heat the oil and roast the gram dal and urad dal until golden and fragrant. Remove the lentil mixture from the pan and set it aside. In the same pan, roast cumin, black pepper, curry leaves and sesame seeds. Remove the mixture, then fry dry red chili in it. Now, add dried mushrooms and toast them for about two minutes. Mix all roasted ingredients in a blender jar. Add salt and hing, and grind to make a smooth powder. Serve hot with dosa, idli, uttapam or other South Indian cuisine.

1. Use fresh mushrooms

The better the mushroom you use, the better it will be that your pod will come out. Also, be sure to slices them equally for best results.

Not only mushrooms, but also spices you use should also be fresh. If you can make them at home, it is even better.

3. Fry the content well

Avoid running into the roasting process. Fry all the ingredients thoroughly, as it will help make the podi extra flavored.
