Malai Ghevar

Material
500 gms all-purpose flour
150 gms ghee
1.5 litres water
1 liter milk
50 grams sugar
5 gms cardamom powder
1 gram saffron
50 gms dry fruits (chopped)
For the sugar syrup:
500 grams sugar
250 ml water
1 pinch of saffron
Ghee for frying
Method
- Heat ghee in a heavy bottom pan and cool it by adding ice, this removes all the impurities and pure ghee gets collected on the surface
- Whisk the ghee well till it becomes smooth and slowly start adding flour and water till you get a batter
- Heat ghee in a heavy bottom pan, place a round mould and start pouring the mixture into it, fry till golden brown.
- Make syrup by heating water and sugar until the sugar dissolves completely
- Put the fried Ghevar in hot syrup and take it out
- To make cream, heat milk, sugar, cardamom powder and saffron and cool it till it reduces to half, cook till it thickens.
- Pour cream over the Ghevar and garnish with chopped nuts
