Assam is a paradise for food lovers. The culinary happiness of the state is fresh, correct mixture of local ingredients and a unique mix of sweet and sour tastes. Recently, celebrity chef Sara Tod started a Pak visit in Assam and tried her hand in making her traditional rice beer, upong in the Majuli River Island. In a post shared on Instagram, he explained that Apong Missing is a special beer of the tribe. It is designed using a centuries -old fermentation process that reflects the deep cultural knowledge of the community.
Apong is considered sacred and symbolizes deep bonding between people and land. It is served in weddings, births, crops and even funerals.

Here is described how to make Apong (fermented rice beer) from Assam:
1. First, fry rice on an open fire and mix it with more than 20 herbs, natives of Assam.
2. Pack the bamboo basket mix and cover with banana leaves. Leave it in fermentation for 6 days.
3. After the fermentation, take a muslin cloth and filter the mixture through it to extract rice beer.

Talking about the taste of rice beer, Sara said that it actually has “interesting taste”. He claimed that it is very different from regular beer. “It’s really sour, fermented taste. It is really delicious and refreshed,” he said.
Sara concluded with her position: “I found it very lucky to be a small part of this process. It reminded me that food and drink, when made in this way, never only happens for livelihood – they are a way to keep identity alive.”
